Hodgepodge(solyanka) is a delicious, rich and flavorful dish that is ideal for lunch or dinner.

 In order to speed up the preparation of this dish and to give it a more refined taste, in Ukraine this dish is prepared on the basis of stew, which gives the dish a special meat aroma and deep flavor, making it even more appetizing, satisfying and convenient to prepare.

The combination of pickles, olives and tomato paste gives the dish a rich flavor with a slight acidity.

This hodgepodge(solyanka) warms you up and energizes you!
 

Ingredients:

• ✅500 g of stew (pork or beef)
• ✅3 potatoes
• ✅1 carrot 
• ✅1 onion
• ✅2 pickles
• ✅2 tbsp of tomato paste
• ✅100 g of pitted olives
• ✅2 bay leaves
• ✅1.5 liters of water or broth
• ✅2 tbsp of oil
• ✅Salt, pepper, herbs to taste
• ✅Sour cream for serving

Preparation:

• 🔹Heat the oil in a saucepan, fry the chopped onion until transparent.
• 🔹Add grated carrots, fry for 3-4 minutes.
• 🔹Add tomato paste, stir and simmer for 2 minutes.
• 🔹Dice the potatoes, put them in a saucepan, add water or broth, bring to a boil.
• 🔹Add the stew and juice, cook over medium heat for 10 minutes. 
• 🔹Chop the pickles and olives, add to the pan. Add bay leaf, salt and pepper to taste. 
• 🔹Cook for another 10 minutes, then remove from heat and let stand for 10-15 minutes.

Tips:

• 🔶To make it tasty, you need to know some things: choose a quality stew, rinse the buckwheat well and take the ratio of buckwheat to water 1:2. Any stew is suitable for this dish: pork, beef or chicken.
• 🔶To prepare this dish, take a high-quality stew, the label of which says for example "Pork stew", and not "Stew", because it is made from pure lumpy meat and must comply with GOST (not - TUU!). 

Serving:

Serve hot, garnished with herbs and a spoonful of sour cream.
