Meat is classified into different grades depending on which part of the carcass it comes from. This determines its quality, tenderness, juiciness, and price.

🥇 Highest grade

  • The most tender and valuable parts: tenderloin, back, lumbar part. 
  • The meat is soft, juicy, with a minimum amount of connective tissue and fat (up to 2%).
  • It is used for steaks, chops, kebabs, and frying without prolonged marinating.

🥈 First grade

  • Middle part of the carcass: shoulder blade, brisket, ham, neck.
  • The meat is denser, contains slightly more fat (up to 6%) and connective tissue (4%).
  • Well suited for stewing, cutlets, baking, and cooking soups.

🥉 Second grade

  • Parts with the highest amount of connective tissue (up to 20%) and fat (up to 14%): shank, shank part, neck, side.
  • The meat is tougher but has a rich flavor.
  • It is used for broths, aspic, and long stewing.

  • The highest grade is the most tender meat for quick cooking.
  • The first grade is a versatile meat for everyday dishes.
  • The second grade is a budget option that reveals its flavor during long heat treatment.
